Raccoon Tails Cookies

Everyone knows Davy always wore a raccoon hat, so his mommy made him raccoon tails when he came home!

Ingredients:

Steps:

  1. Preheat oven to 375 degrees F.
  2. Cream together butter and sugar until light and fluffy.
  3. Beat in the egg and lemon rind.
  4. Drop 1 teaspoon of batter onto a greased cookie sheet.
  5. Grease the bottom of a spoon, dip in sugar.
  6. Gently flatten the tails, in small football shapes. Add more sugar if you need to.
  7. Bake for 7 minutes. or until edges are brown. Remove from sheet.

Chocolate Stripes

  1. In a double boiler: Melt the chocolate and butter in a double boiler, hot but not boiling. Stir until smooth, remove from heat.
  2. Cool until slightly thickened, about 15 minutes.

  4. Spoon 4 lines of chocolate over the "tails".
