Real Easter Egg CookiesI wish I had thought about this idea before tonight, in order to share this for Easter baking. Well, You can always save it! This is made from my Lemon Drop Cookie recipe which I will add to this post. These were fun to make and my grandchildren will enjoy these even more than usual.

Yield: 60 cookies

Ingredients:

  1. Before mixing, blend the sour cream and baking powder in a small bowl and set aside.
  2. Melt butter, mix sugar, eggs, vanilla, lemon and mix with electric mixer until smooth and creamy.
  3. In another bowl, add flour, salt, baking soda, nutmeg and cinnamon. Mix and stir into the cream mixture. Start by using the mixer, then fold it in with a spatula.
  4. This recipe needs to go into the refrigerator for 30 minutes to firm up the dough.
  5. When you are ready to form the balls of cookie dough, roll them into an oval-egg shape. When you place them on the cookie sheet, you will then flatten them with the palm of your hand and keep them looking like an egg shape.

  7. Cook these in a 350 degree F oven for exactly 10 minutes. These do not turn golden brown. Take them out and using a spatula, remove them to another sheet or rack to cool. And continue cooking until all cookies are made.

  9. Combine icing ingredients. Mix well. If icing is thin, add more powdered sugar, if too thick add a few more drops of creamer or milk.

  11. In a very small bowl, take out about 3 tablespoons of icing, using yellow food coloring, give this icing about 4-5 drops. Stir it well and you should have a very bright yellow.

  13. Now, when cookies are cooled, start frosting with the icing, just enough to cover the tops, then with the tip of the knife take a small dab of yellow icing and plop it in the middle. It spreads out a bit and looks like an egg. :)
