Recipes Using Avocados?

I have just been give four avocados. What are some "quick" recipes for using them? Thanks for any help.

Guacamole

Ingredients:
# 1 large ripe avocado
# 1 tablespoon mayonnaise (NOT Miracle Whip)
# 1 teaspoon lime juice
# 1/4 teaspoon Worcestershire sauce
# 5 -6 drops hot pepper sauce
# 1/4-1/2 teaspoon coarse ground garlic salt

Directions:

Prep Time: 3 mins

Total Time: 3 mins

1. Slice avocado lengthwise; remove pit and scoop avocado into a small bowl; add mayonnaise, lime juice, worcestershire sauce, hot pepper sauce, and salt; stir and mash the ingredients together (chunky guacamole takes less stirring and mashing while creamier guacamole takes more) until guacamole is preferred consistency; serve immediately, or cover and refrigerate if desired.

2. NOTE: Lemon juice may be substituted for the lime juice ~ You'll still get yummy guacamole!

California Grilled Chicken

Marinate chicken breasts in some Italian Dressing, brown one side , turn over and place your avocado slices on the chicken. Place a slice of your favorite cheese over the avocado...Swiss or Jalapeno Jack. Turn heat down, add 1/4 cup water to pan and cover for 5 minutes or till done. (Keep an eye on how much water is is pan). Tender, flavorful and a wonderful way to use avocado.

I use avocados in a lot of recipes! Here are my two most favorite:

Avocado Topping
This is tasty served over almost any type of white fish, as a condiment for tacos or just about anything your heart might desire.

Ingredients:
1 avocado, seeded, skin removed and diced
1/3 cup cilantro, chopped
1/2 tsp salt
2 tsp minced garlic
1 tbsp red wine vinegar
2 tbsp fresh lime juice
2 tbsp extra virgin olive oil

Directions:
Place all ingredients in a blender or food processor and blend until smooth.


Seasoned Tomato and Avocado Wraps

Ingredients:
2 tortillas (10 inch)
Cream Cheese to taste
2 tbsp Parmesan cheese, shredded
1/4 tsp garlic powder
Salt and pepper to taste
2 lettuce leaves
1 medium tomato, thinly sliced
1 medium to large ripe avocado, seeded, peeled and thinly sliced

Directions:
Spread cream cheese over one side of each tortilla and equally sprinkle with parmesan, garlic powder, salt and pepper. Top with lettuce, tomato and avocado. Roll up and serve.
