Chili Sauce Sauteed ScallopsThis is a quick meal to whip up for lunch or dinner. I used frozen scallops making this even easier to make. I did soak the scallops in room temperature water for 5 minutes prior. Once cooked the scallop sauce pairs well with the rice!

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 3 - 4 people

Ingredients:

  • 1 lb scallops
  • 1 Tbsp butter
  • 1 Tbsp chili sauce with black beans
  • 1 tsp soy sauce
  • 1 tsp olive oil
  • black pepper
  • 3 cloves garlic
  • 2 stems green onions

Steps:

  1. Wash scallops and drain. Pat dry.
  2. Chop ingredients - garlic and green onions.

  4. Over medium heat, add olive oil and butter. Add garlic and sauté until it is golden brown.

  8. Sauté for 5 minutes. Garnish with green onions and dash of black pepper. It ready to serve.

In our household, this is one of our favorite go to meals to bring to lunch. It's delicious, filling and very healthy. We bought scallops on sale. To stretch the scallops more we cut them in half, so we get more bites to eat!

Cook pasta in a large pot of boiling salted water until tender but firm, 10 to 15 minutes. Drain and rinse under cold water until cooled.

Mix together butter, bread crumbs, garlic, minced onion, parsley, water, lemon juice and salt and pepper to taste. Form into roll and wrap in waxed paper. Chill garlic butter until firm, at least 1 hour.

I like to put about half a stick of butter in a pie pan. Add the scallops & kind of roll them around in the butter.

Add a layer of flavored breadcrumbs & bake until just barely browned. Don't over cook. Delicious!

Our favorite and only way is to cook them on the grill. This only applies to the larger sea scallops. Seasoning is not necessary. They caramelize from their natural sweetness. Just be careful not to overcook.
