Raw Veal Chops

Ingredients:

  • 2 lbs. veal cutlets in cubes
  • butter to brown
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • dash paprika
  • 1 cup sour cream
  • 1 cup mushrooms, chopped

Directions:

Brown veal cutlets in butter, place in covered dish. Mix flour to smooth paste with 3 Tbsp. water in frying pan. Slowly add seasoning and cream, stirring constantly. When thickened remove from stove. Add mushrooms and pour over veal cubes. Bake at 300 degrees F for 1 hour. Serves 6.

In a dutch oven or heavy saucepan brown veal in hot oil. Add onion and carrots; cook until onion is transparent. Stir in parsley.

Pound veal with mallet to flatten and work in salt and pepper. Place cheese and ham slice on each of cutlets; do not overlap cheese and ham.

Top each cutlet with another and pound edges to seal.

Mix flour, salt and pepper. coat meat. Coat bottom of pan slightly with oil. Cook meat on all sides until brown. Add mushrooms and onion cooking until tender. Add juice and seasonings, cook until it boils.

My mother use to make a stuffed veal breast. She would have the butcher put a slit on on the side and I think she stuffed it with a bread stuffing. I would hope someone would have a recipe similar to this. Thank you.
