I love casseroles! This is one of the best I've had, and so easy!

Ingredients:

  • 6-8 slices white bread
  • 4 cups chopped cooked chicken
  • 2 cans sliced mushrooms, drained (4oz. size)
  • 1 (8 oz.) can water chestnuts, drained
  • 1/2 cup Miracle Whip
  • 1 cup shredded American cheese
  • 1 1/2 cups shredded Monterrey Jack cheese
  • 3 eggs, beaten
  • 1 1/2 cups milk
  • 1 can cream of mushroom soup
  • 1/2 cup melted margarine
  • 2/3 cup bread crumbs

Directions:

Layer bread slices in greased 9x13 inch pan. Arrange chicken over bread. Sprinkle with mushrooms. Spread with mixture of water chestnuts and Miracle Whip. Sprinkle with cheeses. Pour mixture of eggs, milk and soups over top. Chill, covered, 3-24 hours. Bake 1 hour at 350 degrees F. Sprinkle with mixture of margarine and bread crumbs. Bake for 25 minutes.

Fancy enough for a dinner party. This recipe can be prepared on a moment's notice if you just keep the ingredients on hand. My family loves it and guests think I'm a gourmet cook! You can easily add a couple more chicken breasts if you need to stretch it a little.

Ingredients:

Directions:

Brown chicken in margarine and place in a 9x13 inch casserole dish. (I spray the dish with Pam for easy clean-up.) Add soup, thyme, chestnuts and sherry to drippings. Bring to a boil. Pour mixture over chicken.

Bake 1/2 hour in a 350 degree F oven, covered. Remove cover and bake an additional half hour. Serve over rice.

This is different because it uses popcorn!

Ingredients:

Directions:

Mix mayonnaise, chopped onion, chopped celery, cheddar cheese, and sugar together in a large bowl and chill for a couple of hours. When you are ready to serve the salad, add the bag of microwave popcorn. Make sure the un-popped kernels are picked out beforehand. Add the diced and drained water chestnuts and bacon bits or real bacon. Toss all the ingredients until all the popcorn is coated with the mayo dressing and serve.
