Grease 9x13 inch cake pan. Cream shortening and sugar. Add eggs, 1 at a time. Add dry ingredients. Bake in 350 degree F oven about 1 hour or until cake loosens from side of pan.

Cream shortening and sugar together in bowl. Add eggs, beating well. Sift flour, salt and cinnamon together. Dissolve soda in 2 tablespoons water.

Combine first 3 ingredients in saucepan, mixing well. Cook over medium heat, stirring constantly, to 248 degrees F on candy thermometer. Remove from heat and stir in salt and pecans.

| Cheesy Ham Soup

Put enough water in 4 qt. pot to cover ham bone. Add onions and season to taste. Simmer for 2 hours, stirring occasionally. Remove ham from bone and save with liquid.

Sprinkle fish with seasoning salt. In a bowl, mix butter, garlic, scallions, mushrooms, soy sauce, water and ginger. Place fish in bag and place bag in shallow baking pan.

Melt together the chocolate and butter; cook slightly and add the desired flavoring. Meanwhile, make a meringue by beating 6 egg whites and sugar together until stiff.

| Mandarin Orange Lettuce Salad

Mix together salad ingredients in a large bowl. Top with salad dressing.
To make dressing: Simmer above ingredients, except oil, until smooth consistency and well blended, about 5 minutes.
