Blend oil, sugar, eggs and flavorings in large mixer bowl. Add apples and nuts. Sift dry ingredients together and add. Pour into 2 well greased large bread pans or 4 small ones, and bake at 350 degrees F. for 45 minutes to 1 hour.
Now we all love warm sweet muffins, but there are a group of muffins that never get any recognition. They are called savory muffins because they are not sweet. They can be a herb muffin or one with vegetables instead of fruit.
This recipe was shared with me by a parent while I was teaching . She told me this was the way she had gotten her children to not only eat pumpkin but to also eat breakfast. The next day she showed up with the muffins for our family.
