When my children were in their elementary and middle schools, they never really liked oatmeal for breakfast. However, they loved this, and they both liked to be creative with this recipe. I liked them eating more nutritionally.

Spread crushed pineapple on paper towels to remove as much juice as possible. After pancake has been cooked on one side, sprinkle pineapple onto the pancake just before flipping it over.

I just love pumpkin pancakes. They're so perfect for fall. I brought leftover pancakes into the office for breakfast the other day and someone tried to steal them!
