Bread Pudding in a Mug
When my children were in their elementary and middle schools, they never really liked oatmeal for breakfast. However, they loved this, and they both liked to be creative with this recipe. I liked them eating more nutritionally.

Pineapple Pancakes
Spread crushed pineapple on paper towels to remove as much juice as possible. After pancake has been cooked on one side, sprinkle pineapple onto the pancake just before flipping it over.

This recipe serves two. In large bowl, beat eggs; mix milk, salt, Parmesan cheese, Swiss cheese, spinach, parsley, onion, and garlic. Heat 1 tablespoon butter in skillet.
