I like this as a sort of brunch recipe, but really it's good any time. Quick and easy, too, because it's done in the microwave.
Quick and Easy Brunch Scramble
This recipe is done in minutes, it's also delicious and nutritious.
This is our favorite recipe for zucchini. You can have it as a brunch item or as a light supper during the summer months.
Line crescent roll dough in ungreased pie plate. Arrange bacon, tomato slices, and cheese on crust. Beat egg whites until stiff. Combine egg whites with yolks, sour cream, flour, salt and pepper.
Peel potatoes, cut in half length wise and slice thin. Heat oil in medium size nonstick skillet over medium heat. Add potatoes, cover and cook 12 minutes, stirring occasionally, until tender and browned.
Heat oven to 425 degrees F. Stir baking mix and 1/4 cup light cream to make a soft dough. Knead 5 times.
Line a quiche dish with 1 pie shell. Arrange 1/2 of bacon or ham in bottom of shell. Break 7 eggs into the dish. Pierce the egg yolks with a fork, but do not mix the egg yolks with the egg whites.
Combine all ingredients and mix well. Refrigerate overnight; bake at 350 degrees F for 1 - 1 1/2 hours or until top is golden. Serves 10-12. Recipe may be doubled, but bake for 2 hours.
Not only do I like the flavor of this quiche but I also love that it freezes well.
This little goodie is easy to make, uses up un-usable leftovers, and is very inexpensive. It does not "collapse" like a real souffle and can be made ahead of time and baked before serving. You may add meat, veggies, and condiments to suit your taste and leftover "stash".
