| Waldorf Popovers
|
|
A nice little salad in a pastry, easy to make, everyone loves them. Cook the pastry cups according to package directions. Let cool completely. Lift up the tops on the pastry cups leaving the inside empty. Spoon in the waldorf salad filling each pastry cup.

| Salmon Souffle'

Melt butter; add flour and blend. Add salmon liquid to milk to equal 1 pint. Add seasonings. Cook until thick. Add bread crumbs, egg yolks, eaten light ad flakes salmon.

| Sausage and Greens Quiche

Preheat oven to 450 degrees F. Line a 9-in. pie plate with pastry. Trim pastry to 1/2 inch, beyond edge of pie plate; flute edges. Line unpricked pastry shell with a double thickness of heavy-duty foil.

| Green Chile Bake

Preheat the oven to 350 degrees F. Lightly grease a 9x13 inch baking dish. In a large bowl, beat the eggs and stir in the Monterey Jack cheese, cottage cheese, melted butter, flour, baking powder, salt and chilies.

| Brunch Egg Casserole

Fry the bacon. Combine the croutons and cheese. Place the croutons and cheese in the bottom of a greased 6x10 inch pan. Mix the eggs, milk, salt, mustard and pepper together. Pour the egg mixture over the croutons and cheese and top with the crumbled bacon.
