I am looking for a recipe for carrot cake for approximately 20 people. I would like one using eggs, oil, flour, cinnamon, and carrots.

Mix together flour, cinnamon, soda, salt, carrots and pecans. Then combine sugar, oil, pineapple, eggs and vanilla and add to first mixture.

| Coconut Carrot Cake

|
Combine sugar, oil and eggs; beat well. Sift together flour, baking soda, cinnamon and salt; stir into sugar mixture. Stir in grated carrots, drained crushed pineapple, nuts and coconut. Pour into greased and floured 9x13 inch pan.

| No Grate Carrot Cake

Combine sugar and oil. Add eggs, 1 at a time. Blend dry ingredients into mixture, adding carrots and nuts last. Bake in tube pan at 375 degrees F for 50 minutes.
