Does anyone know how to make the pineapple cheesecake from Fritz's Bakery in Croydon, PA? The pineapple is on the bottom and it has some sort of cake like crust.

Line muffin tins with cupcake papers. Place a vanilla safer in each cup. Beat ingredients until light and fluffy. Spoon into cups. Bake at 375 degrees F for 15 minutes. Cool. Put on topping and chill. You can use any jam or cherry pie filling for topping.
For Crust: Grease springform cheese cake pan and dust with a few crumbs. Pat mixture onto bottom of pan for crust. For Filling: Beat eggs, add sugar, then vanilla and cheese. Beat at medium speed 15 or 20 minutes until smooth.
