Quick and Easy Chicken Quesadillas
Easy to make, and freezes well. Spray 2 8 inch square pans. Spread a tortilla generously with cream cheese and place in pan. Spoon salsa over.

Preheat oven to 450 degrees F. In large bowl, combine cheese, artichokes, olives, 2/3 cup salsa and cilantro; mix well. Brush 1 side of tortilla with butter. Place, buttered-side down, on baking sheet.

Quesadillas With Tomato Salsa
Melt butter in a wide round skillet over medium high heat. Place one tortilla in skillet, sprinkle cheese onto half of tortilla. Fold tortilla over and press flat, move to one side of the pan.
