Build Your Own Breakfast Burritos
Use your imagination for ingredients and the sky is the limit for use of any possible leftovers (or use of yesterday's leftovers) ;-) It's especially fun when preparing for company because everyone can choose their own fillings :-)
Brown the sausage and chilies together and drain. Place a small amount of cheese and about 1/8 of the ground sausage down the center of a tortilla. Roll up the tortilla and place, seam side down, in an 8x10 inch pan.
In skillet, heat small amount of oil and saute' the garlic and onion until tender. Add beef, tomatoes, chilies, cumin and taco sauce. Simmer at least 1 hour
Brown meat, onion and garlic in oil until meat is browned and onion is tender. Add salt and can of green chilies. Mix 1 can enchilada sauce with the can of refried beans and cheddar cheese. Heat. Set aside.
The zesty flavor in these lunch burritos is a great surprise. Place beans in a large microwave-safe bowl; mash lightly. Stir in the chilies, onion, peppers, oil, chili powder, garlic, oregano, cumin and salt.
In large skillet, heat oil over medium heat, cook onion for 3 minutes, add garlic, celery and 3/4 cup of the green pepper, cook, stirring often, for 5 minutes. Drain chick-peas, reserving 1/4 cup of the liquid.
Fry ground turkey and onion together in a very small amount of oil. Add water, salt, pepper and chili powder. Simmer together. Food process or blend the pinto beans.
Combine mayonnaise and salsa. Stir in chicken and beans. Layer lettuce on center of each tortilla; top with chicken mixture.
Lightly brown beef, remove from heat and drain. Stir in onion, seasonings, refried beans and chili. Spoon equal amounts of meat mixture on each tortilla. Roll and place seam down on jelly roll pan.

I am looking for a recipe for making Pork and Avocado Burritos. I have searched all over the web and can't find one. Any one have a recipe they can share with me? I love them at the restaurants but every time I want to order one, they say they are out of avocados.
