South of the Border Pie

To make filling, brown ground beef, onions, and green pepper and drain off fat. Add remaining ingredients except cheese. Bring to a boil; simmer uncovered for 20 minutes or until thickened.

Chicken Enchilada Casserole

Combine ingredients in a large bowl. Tear tortillas into small pieces and fold into mixture. Pour into greased 9x13 inch pan. Sprinkle top with reserved cheese.

Fiesta Breakfast Casserole

Choose one of the 3 meats. Brown meat and drain, if needed. Butter one side of each slice of bread. Lay buttered-side down in a 9x13 inch baking dish.

Taco Hot Dish

Brown hamburger and onion together. Drain off any grease. Add tomato sauce and taco mix to meat mixture. Crush tortilla chips and spread in bottom of 9x13 inch pan.

Tortilla Casserole

Cook ground beef in a large skillet over medium heat until beef loses red color. Drain off grease. Add onion, garlic salt, salt, pepper, 1/3 cup taco sauce, green chilies, mushrooms, 2/3 of the olives, broccoli, mozzarella and 1 cup of the Parmesan cheese.

Green Chile Chicken Enchilada Casserole

Mix the first 6 ingredients together in a large bowl. Layer 1/3 of the torn tortillas on bottom of a greased 9x13 inch pan. Layer on 1/3 of the chicken mixture and then 1/3 of cheese.

Leftover Mexican Casserole

A layered dish of one large flour tortilla with refried beans salsa hamburger with seasonings a layer of cheese and a layer of black beans and rice with corn. Add more meat and cheese with tortilla chips on top.

A Wonderful Taco/Burrito/Enchilada Casserole. In a large skillet over med. heat, cook the beef, sausage and onion until meat is no longer pink; drain. In a food processor or with a potato masher, blend beans till chunky/smooth.
