Sour Cream Tortillas
Chop green chili peppers. Chop onion very fine. Heat tortillas until pliable. Mix sour cream, soup, chilies and chicken; beat slightly. Place 2 tablespoons sour cream mixture into center of each tortilla.

Taco Pie
In a large fry pan, brown ground beef; drain. Stir in seasoning mix, water and olives; simmer 5 minutes. Meanwhile, separate crescent dough into 8 triangles.

Mexican Lasagna
Can be made ahead and freezes well. Brown meat and drain. Add 1 1/2 cups cheese. Cook until melted, stirring frequently. Stir in salsa.

Chili Enchiladas
These are similar to what you get on the enchilada dinner at El Chico, but way better. In a skillet large enough to hold one flat tortilla, heat the 2 tablespoons of oil over medium heat.

Enchilada Casserole
Brown ground beef in skillet, stirring until crumbly. Pour off drippings. Stir in soups and seasonings, mixing well. Layer chips, ground beef mixture and cheese alternately in large baking dish until all ingredients are used, ending with chips.

Chipotle Chicken Soft Tacos
Quick and easy and chipotle is another of my favorite flavors :-) This recipe serves 2. In a large, deep skillet fry the bacon over medium-high heat until evenly brown.

Huevos Rancheros
In heavy skillet or Dutch oven fry the bacon. Remove bacon and reserve drippings. Saute' onion in the bacon drippings until clear. Add peppers, stirring often.
