My friend taught me to make these years ago when our children were still small. Our families both just love them! I do not put in the jalapeno peppers, as we think they are too hot.

Years ago, when my girls were just small, I first made Enchiladas for the family. They quickly became a family favorite.
One of my mom's favorite dishes! Heat soup, chilies and milk together. Layer, beginning with chips, in 9x13 inch pan. Alternate with chicken, soup mixture, and cheese.
It's all your favorite taco ingredients thrown together into a plate of goodness. I like this dish because it's a cheap and a "not every night" meal. Anyone who loves Mexican food will love this meal.
About 40 minutes before serving: Preheat oven to 350 degrees F. In 10 inch skillet, prepare taco seasoning mix as label directs with ground beef for tacos.
Combine lime juice, chilies, garlic and chicken bouillon in shallow dish; mix well. Rinse chicken; pat dry. Marinate in lime juice mixture in refrigerator.
The tortillas need to be softened before they are filled, rolled, and baked by gently frying in a little oil to improve the flavor of the tortillas. Of course, you simply must serve these with refried beans and Spanish flavored rice.

The following suggestions will make a huge number of different kinds of "enchiladas". They are all made using flour tortillas, but you could substitute crepes if you are more ambitious.
Chop green chili peppers. Mix cream of chicken soup, chili peppers, sour cream, and onions. Wrap chicken, soup mixture and cheese in tortilla shells.
Prepare crust according to directions on box. Mix beans and taco seasoning. Spread on crust. Top with browned hamburger and 8oz. cheddar cheese.
