Salsa Chicken
This recipe is so easy. It's just chicken with salsa dumped over it. You can throw it together in the morning and keep it in the fridge until you are ready to cook it.

Chicken Enchiladas
Brown onion in butter, combine with soup, broth and green chilies. Add pieces of chicken and beat well.

Viva La Chicken
Cook chicken breasts; remove meat from bone and cut in large pieces. Cut 1/2 package of corn tortillas into strips and place in a large shallow greased casserole. Add 3 tablespoons of chicken broth on top, alternate chicken and salsa.

Super Easy Mexican Meal: Mexican Chicken And Black Bean Salad
When preparing this easy meal, make the black bean salad and salsa the day before serving. This makes the whole meal very easy to prepare and serve the next day! I also serve tortillas and additional salsa with the chicken and black bean salad!

Chicken Mole with Vegetables
Place chicken and broth in a large pot. Bring to a boil over high heat. Reduce heat to medium-low. Simmer, uncovered, for 30 minutes.

Acapulco Chicken
Season chicken with 1/2 Tbsp. chile powder, salt and pepper. Heat oil in a large skillet over medium high heat and saute seasoned chicken for 3 to 4 minutes, or until no longer pink. Remove from skillet with a slotted spoon and keep warm.

Crockpot Chicken Taco Meat
In crock pot, put 1-2 boneless skinless chicken breast. Add 1 cup of your favorite salsa. Let cook on high for 4-5 hours. Before using, shred chicken in crock pot. You now have the meat for your chicken tacos.
