Chili Con Queso Artichokes
Using a sharp knife, level the bottom of each artichoke and cut 1 inch from the tops. Using kitchen scissors, snip off tips of outer leaves. Place artichokes in a large saucepan; add 1 inch of water. Bring to a boil.

Taco Filled Peppers
Recipe for Taco Filled Peppers. In large skillet, brown hamburger. Drain. Stir in taco seasoning, kidney beans, and salsa. Bring to a boil, then simmer for 5 minutes. Cut peppers in half lengthwise. Remove stems and seeds. Immerse peppers in boiling water for 3 minutes.
