Mother's Day Picnic Menu Ideas

I'm planning a Mother's Day picnic for my DM. She recently lost her husband so I'm trying to plan a low key event with just a small amount of family members. Does any one have ideas of a simple, but special menu?

Foil Pocket Meal

When camping in the summer, it is too hot to fire up the oven to cook when in a camper. I like to put my meat and veggies in a foil pocket and cook them over an outside grill.

Patio Lunch and Kid's Backyard Picnic

Make grilled cheese with bread slices (any type), cheese slices (any type) and Foreman grill or non-stick skillet. Place cheese between 2 slices of bread. Then cook until golden brown. With skillet, flip sandwich, repeat.

Make Ahead Meals For Boating Weekends

I was wondering if anyone had any ideas for what I could make a head of time (freeze, etc.) during the week to use for meals (sandwiches get boring after awhile) on the boat (so not too complicated) on the weekends?

Campfire Potatoes

Can be placed on a grill over hot coals in the fire or on a barbeque. Turn occasionally. Takes 1/2 - 3/4 hour to cook depending on the heat.
