Making Pecan Pie With Butter Instead of Margarine
I made a pecan pie using an old tried and true recipe, except the recipe called for oleo, and I used butter. It would not cream and there was a white layer of something under the top layer of pecans. Can oleo, only, be used in a pecan pie?
Beat eggs; add sugar and beat again. Stir in syrup; then add butter, salt, vanilla, and burnt sugar; mix well. Add pecans and pour into pie shell. Bake at 350 degrees F for 50-60 minutes.
Melt caramels and margarine in top of double boiler. Combine rest of ingredients and add to caramels. Pour into unbaked pie shell. Bake at 350 degrees F for 45 minutes.

This is a rich tasting southern dessert which my older sister made when I was a little kid. She was in high school when I was born and we had a very special relationship. I'm getting older now and want to share her recipe.
Melt chocolate and margarine together, add sugar and flour. Add eggs and vanilla, beaten together. Add pecans. Pour into unbaked pie crust. Place in cold oven. Bake at 350 degrees F for 30 minutes.
