Pumpkin Chiffon Pie
Combine first 7 ingredients in top half of double boiler. Cook until thick, stirring constantly. Soften gelatin in 1/4 cup cold water. Stir into hot mixture, stirring to dissolve. Beat egg whites until soft peaks form.

Self Crust Pumpkin Pie
Mix all ingredients in a large bowl and pour into a 9 inch pie plate. Bake at 450 for 45-55 minutes or until knife inserted in center comes out clean.

Recipe for Pumpkin Pie. Mix pumpkin, flour, sugars, spices and salt. Add egg yolks, milk, lemon and vanilla. Beat egg whites and fold into mixture. Bake at 350 degrees F until firm.
