Oven Spicy Fries
Preheat oven to 450 degrees F. Wash and scrub potatoes; slice into fry size, leaving skins on potatoes. Place potato slice one layer only on cookie sheet. You'll need 2 sheets. Spray lightly with non-stick cooking spray and sprinkle with seasonings.

Crispy Mashed Potato Cakes
Times like this when food prices are rising I am so glad for the simple and thrifty dishes my mother and grandmother taught me. One that I always loved and decided to put a new twist on is leftover mashed potato cakes. For some reason it popped into my mind in the shower, "I bet if you dip potato patties in instant potato flakes it would make a crispy, almost potato chip coating."

Easy Potatoes for Camping or Cookouts
These are my favorite potatoes for the summer! My mom used to make them when we were little! I have found that when going camping or if I am going to be busy and will not have time later. Earlier in the day, I peel potatoes and cut in quarters, cook them some until they are just cooked a little way through. You can make as many potatoes as you want.

Sinful Potatoes
Combine all ingredients except bread crumbs in large bowl, mixing well. Spread in 9x13 inch baking pan. Top with bread crumbs. Bake at 350 degrees F for 1 hour.

Looking For Potato Pancake Recipe
Does anyone have a recipe for mashed potato pancakes? My mother made the best ones on the planet but she passed away before I could get the recipe. All I remember is that she put in an egg, salt and pepper. I tried adding flour but then the pancakes tasted like flour. She was from England, in case that makes a difference.

Fried Potato Cakes Using Instant Potatoes
In skillet, heat oil. Add remainder of ingredients together and make into patties. Place into skillet, turn over when patty turns golden. Do the same on the other side.

Jiffy Potato-Onion Puffs
Prepare potatoes using package directions. Add remaining ingredients; mix well. Drop by tablespoonfuls, several at a time, into deep fat at 365 degrees F. Fry for about 1-1 1/2 minutes, until golden brown, turning to brown sides.

Tuna Stuffed Baked Potatoes
Cut potatoes in half and scoop out meat. Combine potatoes with remaining ingredients except cheese in bowl, mixing well. Spoon into potato shells. Top each potato with cheese slices. Bake at 350 degrees for 15 minutes or until cheese melts.
