Baked Garlic Mashed Potato
This is family favorite for the holidays; it is always requested. It is delicious and can be refrigerated and made several days ahead of time. Also, it can be frozen.

Pineapple Marshmallow Sweet Potatoes
Thoroughly mix all ingredients except marshmallows. Beat until light and fluffy. Use more milk and fruit juice if you need to. Place in buttered casserole and bake at 350 degrees F for 30 minutes or until heated through.

Mashed Potatoes Without Fat
I discovered a great way for making mashed potatoes, and I don't use any fat in it. While making the potatoes for mashing, I put a can of vegetable broth into a pan, and just simmered it while the potatoes were cooking.

Twice Baked Cheesy Mashed Potatoes
I love cheese and this recipe is an excellent use of leftover mashed potatoes, too :-) Saute chopped onion in oil until tender. Combine the sauteed onion, mashed potatoes, 1 cup cheese, bacon, salt and pepper in a large bowl.

Olive Oil and Lemon Mashed Potatoes
Use olive oil as a butter alternative and the lemon zest for added flavor. I've substituted orange zest and that is also yummo.

Mashed Potato Salad Recipe
Recently while I was at a party, I had Mashed Potato Salad. It was delicious. The potatoes weren't completely mashed, but had chunky pieces in it. There were diced onions, red bell peppers, and hard boiled eggs in the salad. Those are the only ingredients that I recognized.

Microwave Mashed Potatoes
Place potatoes in a microwave-safe dish. Cover tightly with lid or plastic wrap. If using plastic wrap, poke a small hole in the wrap. Microwave on high for 8 minutes or until done. Use oven mitts or tongs to remove from microwave.

Wasabi Mashed Potatoes
No more boring taters! Try this Japanese spice to "spice up those spuds a notch". You can find it in most supermarkets these days, just ask which aisle. These taters are a great companion for steak but also nice with fish and poultry.

Hot Deviled Potatoes
Prepare potatoes according to package directions. Heat sour cream, do not boil. Add mustard, salt and sugar. Stir to blend. Stir in hot potatoes and add onion. Sprinkle with paprika. Bake 30 minutes in 350 degrees F oven.

Do-Ahead Mashed Potatoes
Cook potatoes; mash until no lumps. Add rest of ingredients except butter or margarine. Mix again and let cool. Put into greased casserole. Dot with butter or margarine.
