| Apple-Basted Turkey
|
|
Preheat oven to 225 degrees F. Spray bottom of roaster with non-stick spray. Remove skin from turkey and place in roasting pan. Pour 1 cup of apple juice over turkey. Bake, covered, basting every 30 minutes with apple juice and drippings.

| Buttermilk Pecan Chicken

Preheat oven to 350 degrees F. Place butter in large, shallow roasting pan and melt in oven. Remove and set aside. Mix buttermilk land egg in shallow dish.

| French Apricot Chicken

Mix first 3 ingredients; spread over chicken. Bake at 350 degrees F for 1 1/2 hours. Garnish with parsley. Serves 8.

I love chicken, and this dish has only 6-7 ingredients, so it's super easy. Heat cooking spray coated pan on medium. Sprinkle chicken with rosemary, and brown, turning once.

| Scalloped Chicken

|
In a greased 1 1/2 qt. casserole, place in alternate layers the chicken, gravy and bread crumbs. Dot with butter. Bake in 350 degree F. oven for 20-30 minutes.

| Cashew Chicken

|
Lightly dust chicken with a little flour to coat. In skillet, brown chicken in oil and margarine. Remove chicken from skillet and drain off fat. Stir to loosen browned bits.

I like to do a "batch" of these up at one time, then use them in different ways for several days. I might use them in wraps, stir fries, salads, Caesar salad, my husband likes them with good old fries.

| Greek Chicken Wings with Cucumber Sauce

I found this at Taste of Home but tweaked the recipe just a bit. Mix marinade ingredients in a large baking dish, add chicken wings, toss wings well, cover and refrigerate for about eight hours, tossing once or twice.
