Easy to prepare and simple ingredients make this a favorite salad for any day all year long. Create a delicious sandwich to eat with soup, or use it as the main attraction on a luncheon plate and call in the troops.
This is a favorite of mine. Nice because it is good as a salad or in a sandwich. I prefer mine not in the sandwich but just plain.
Heat coals of gas grill. Prepare Margarita Dressing. Cover and grill chicken 4-6 inches from heat 15-20 minutes, turning and brushing occasionally with dressing until juice of chicken is no longer pink when centers of thickest pieces are cut.
In small bowl, combine all dressing ingredients; blend well. In large bowl, combine all salad ingredients except lettuce and walnuts. Pour dressing over salad; toss gently. Cover and refrigerate 1-2 hours to blend flavors.

This is a quick fix and a great dish for anytime! Boil and debone chicken; chop into pieces. Cut the grapes in half. Chop celery very fine. Chop apple. Toast nuts. Mix all ingredients together well with mayonnaise and enjoy.

Chicken Salad with Broccoli Dressing
Combine first 6 ingredients in bowl and set aside. In blender, combine broccoli, oil, vinegar, salt, dillweed, cumin, and pepper. Blend until smooth. Pour over chicken mixture.
Drain the fruits well and refrigerate overnight. In medium size bowl stir together salad dressing and mustard. Stir in chicken, celery, onion, mushrooms, pepper and olives.
Saute the celery a few minutes. Mix all ingredients except the last two (corn flakes and almonds). Pour in casserole dish which has been sprayed with non-stick cooking spray.
Mix all together. Garnish with toasted almonds. Serve in lettuce cups of halved avocados.
Basil and Parmesan Chicken Salad
Puree the mayonnaise, basil and garlic in a blender or food processor. Toss chicken, celery, pureed mixture and Parmesan in a bowl. Season with salt and pepper to taste.
Dissolve bouillon in boiling water and cook wild rice; cool. Mix remaining ingredients and add gently to cooled rice. Refrigerate several hours or overnight.
