I threw this together for a quick summer salad this week. My husband loved it so much that he said he would eat it for breakfast, lunch and dinner. Quinoa is so versatile and a great substitute for pasta or rice.

Taco Salad

This is easy to make and kids love it so much. Wash lettuce and dry it well or let it drip dry. Next, fry your ground beef, grate cheese, and chop green onions, using all but the roots.

Mexican Chef Salad

Shred lettuce into small pieces; place in large bowl. Add onions, tomatoes and cheese; toss well. Brown ground beef; add kidney beans. Heat thoroughly; drain off excess liquid.

Mexi Corn Salad

Not the usual corn salad, but one with a Mexican flavor, can be made into a dip also. In a bowl mix the corn, mayo, onion and cheese. Just before serving, top with slightly crushed chili corn chips (Fritos)

Fiesta Tossed Salad

Combine lettuce, corn, cheese, tomatoes and onions in salad bowl. Add enough salad dressing to moisten; toss lightly. Serves 6.

Cut up lettuce. Cut tomatoes into bite size pieces. Chop onion and shred cheese. Mix together all ingredients; add dressing and serve.

Brown ground beef and drain any grease. Add taco seasoning mix and water to beef mixture and cook according to package directions. Set ground beef mixture aside to cool. While the meat is cooling cup up you veggies.

Chicken Taco Salad

Mix together all ingredients, except chips. Crunch chips on plate and top with salad. Top salad with optional ingredients, such as sour cream, picante sauce or salsa or Ranch-style dressing. You can also use ground beef instead of chicken.

Lay whole chips on a plate(s). Fill in cracks with broken chips. Layer fresh spinach or spring mix over chips. Spread black beans over spinach, then salsa. Next top with fresh cilantro and avocado slices. Top with shredded cheese to your liking.

Brown ground beef, drain fat and cool. Cut up lettuce, tomatoes, onion and put in fairly large bowl and add cheese. Mix Miracle Whip and taco seasoning in big bowl with the lettuce, onion, tomato.

Brown meat; drain. Add onion; cook until tender. Stir in barbecue sauce and cheese. Cover; simmer 10 minutes over low heat, stirring occasionally.
