Meatball-Zucchini Heroes
Some evenings I don't feel like cooking or eating a full meal, so I make these heroes which are more than filling and delicious. The instructions below are for the full recipe. I use only the amount I want for the time being.

Tuna Boats
Mix above ingredients as tuna salad. May add pickles, celery, onion or whatever you like in tuna salad. Place mixture in hot dog buns. Wrap in foil and bake in oven 300 degrees F for 25-30 minutes to warm and melt cheese.

Fish Stick and Cheese Sandwich
My daughter loves these sandwiches. When I inquired as to where the recipe came from, she replied, "from my kitchen". I tried one, then later made another and they're very good. Hope you like them too.

Bacon-Tomato Bagel Melts
Place bagel halves cut side up on a baking sheet. Top each with two tomato slice and two bacon strips. Sprinkle with cheese. broil 5 inches from the heat for 1-2 minutes or until cheese begins to melt.

This is best if you have a quesadilla maker appliance. Put one tortilla inside the appliance. Spread peanut butter and your favorite jelly, jam or preserves over the tortilla.

Monterey Spinach Melts
Preheat oven to 375 degrees F. Cut cheese into 20 thin slices; cover and set aside. In large bowl, combine mayonnaise, sour cream, salt and garlic; mix well until well blended.
