Cranberry Sweet Potatoes or Yams
Here's a nice sweet potato or yam variation for Thanksgiving and Christmas. Preheat oven to 350 degrees F. Mix cranberry sauce and juices in a bowl. Mix corn syrup and melted butter in another bowl.

Sweet Corn Bites
Delicious as a starter or teatime snack, good for vegetarians. Sift the dry ingredients together and add the herbs. Mix the milk and butter.

Grits and Greens Casserole
This recipe is cheap and different! It is tasty for breakfast, or as side dish for any other meal. It freezes nicely and carries well to get togethers. I changed it up from much richer, more expensive versions that called for heavy whipping cream.

Calico Beans
Cook first 3 ingredients in large skillet until meat loses its color and onions are tender; drain off excess fat. Stir in next 5 ingredients.

Pinto Beans and Potatoes
Cook dried pinto beans in a crockpot on low all night. This is really good. Cook pinto beans in a crock pot over night on low. Turn off when done.

Basic Golden Oats
When I discovered this recipe some years ago, I just couldn't have imagined that oatmeal can do this! Use it with any rice, pasta or potatoes with your meal. It also isn't much longer to make it than instant rice.

Scalloped Pineapple
Stir bread crumbs into butter; set aside. Mix sugar and flour in saucepan. Add juice drained from pineapple. Bring to a boil and cook until thickened.

Potato Cabbage Surprise
The surprise is that even people who normally shun cabbage, will enjoy this dish. I love potatoes but try not to overdo it. The potato taste dominates and makes this such a great comfort food.
