Awesome, I love vegetables. Preheat the oven to 350 degrees F. Cut the bread slices into 3/4 inch cubes. Place them on a cookie sheet and toast them in the oven for 10 to 15 minutes; set aside.

I am looking for an easy, but tasty home made soup recipe. I'm roasting a chicken and would like to use the leftovers for soup. I'd like to make a big batch that I can freeze in Ziploc bags for later use. Thanks for your time.

| Sour Cream Chicken Tortilla Soup
|
 In a large pot add chicken, broth, rotel, corn, American cheese or white cheese dip, cumin, chili powder, garlic, paprika, salt, pepper, and sour cream. Bring contents of pot to a boil and then reduce to a simmer. Simmer for 30 minutes.

| Faux Pho

I recently came down with a killer cold and wanted chicken soup. However, I don't really care for traditional chicken noodle soup, especially the canned kinds. It was too late in the evening, and I felt too lousy to make a batch of homemade. What I really wanted was Pho - I adore it! But I didn't feel good enough to do the driving to the nearest restaurant, and the post-Christmas budget is tight.

| Hearty Tuna Cheese Chowder

Saute celery and onion in butter until tender. Stir in flour and heat until bubbly. Stir in 3 cups milk and heat on medium heat until thickens. Lower the heat and add the other 3 cups milk and heat thoroughly.

| 10 Quarts of Homemade Italian Chicken Soup (for less than $10)

Put all into a 12 qt pot and simmer for 2-3 hours. Use a hen, it won't break down as quick as a chicken (the meat does not come out dry or stringy) and has more flavor. Check the soup for flavor, add more salt if needed.

In a large pot, boil the chicken, onion, celery, carrots, parsley, rosemary, and thyme together, until the chicken is almost done, then add the potatoes.
