We love making s'mores when camping or cooking out at home, but adjusted the "recipe" for a lighter s'more. Instead of using the regular ingredients of graham crackers, chocolate bars, and marshmallows, we use fudge striped cookies and marshmallows.
Campfire Chicken and Dumplings
Chicken and dumplings is a family favorite, and this simplified version is our classic camping standby. It's a healthy, well-rounded meal and very filling. This soup is also warm, which is good since it tends to get cold in the evenings where we camp.
My husband used to have his campers make these foil packets when he was a camp director. Now we make these when camping with the kids. It's a favorite; so easy to make and healthy too, which is good considering this is usually followed by s'mores for dessert.

This is a nice change from an ordinary slice of cake. Cut 12-18 12-inch squares of heavy-duty foil; set aside. Cut 1-inch slice from top of each orange. Scoop out orange fruit and pulp. Leave peel intact as a baking cup. Prepare cake according to package directions.
A simple dessert to cook in coals. Cut a wedge shaped section in each banana. Pull back peel. Remove wedge shaped piece of banana. Fill cavity with milk chocolate chips and marshmallows.
Super easy and cheap. You don't have to buy the candy bars. So good!

When camping in the summer, it is too hot to fire up the oven to cook when in a camper. I like to put my meat and veggies in a foil pocket and cook them over an outside grill.
Place a tablespoon of catchup on a piece of foil large enough to make into a bundle. Place a hamburger patty on top of catchup, then a slice of onion, some diced carrots and diced potato, salt and pepper.
This might be the easiest bread of all times. Probably close to that eaten on the pioneer trails by the old "49'ers" of gold rush fame. It's also a good thing to know how to make bread of some kind.
With summer coming and all the snacks we go through this is a real money saver.

I like this recipe because I live alone and can make up several packets at a time to freeze when there's a bulk sale of chicken to take advantage of at a low price and, other than tossing a salad, each packet is a full meal for me :-)

Delicious, few ingredients and not much time; what's not to like? Boil the water and add the rice, cover. Turn on the oven to 350 degrees F.
Camping is a great family time but you always don't have lots of room for cooking and storage. I make what we call a bag salad. You cook all your favorite ingredients (pasta or potato salad) and put in a ziplock bag.
Cut bacon and ham into small pieces and saute with onion. Add vegetables and mix. Simmer over campfire about 45 minutes or bake at 375 degrees F for 40 minutes.
Before a camping trip, prepare a chicken by buttering and adding your favorite seasoning, inside and out. Then wrap it in three or four layers of aluminum foil. Put the whole thing in a gallon zipper bag, and refreeze.
Easy Potatoes for Camping or Cookouts
These are my favorite potatoes for the summer! My mom used to make them when we were little! I have found that when going camping or if I am going to be busy and will not have time later. Earlier in the day, I peel potatoes and cut in quarters, cook them some until they are just cooked a little way through. You can make as many potatoes as you want.
Combine all ingredients (except noodles) and heat to serving temperature. While meat mixture is heating, cook the noodles. Serve over cooked, drained noodles.
Grill chicken, uncovered, over medium heat for 3 minutes on each side. Place two pieces of chicken each on four pieces of heavy duty foil. Divide potatoes, carrots and green pepper between the four pieces of foil.
Fast and Easy Puddings for Camping
Throw in an extra empty water or milk jug, a box of instant pudding and milk. Empty your pudding mix and milk in the jug and SHAKE it to mix.
Use canning rings to make round egg patties for egg sandwiches. Just put a canning jar ring on your skillet, add the egg contents inside the ring and cook until the egg has solidified. Apply a little cooking oil to the ring to prevent sticking. Eggs will fit perfectly in between small hamburger buns, bagels, or English muffins.
