Salmon and Bacon Sandwich
Using leftovers and a few pantry items, this makes a delicious and filling lunchtime sandwich. I've used the spread as a veggie dip for years and thought it might work on this - and oh, does it ever.
- 1 salmon fillet, cooked
- 4 rashers bacon, cooked
- 2 Tbsp. mayonnaise
- 1/2 tsp. dill weed
- 1/4 tsp. lemon zest
- 2 slices hearty bread
Reheat the salmon and bacon, if desired. Mix mayonnaise, dill, and lemon zest in a small bowl and spread on bread. Place salmon and bacon on one side of the bread, and top with the other piece of bread.
