Sautéed Asparagus

Ingredients:

  • 2 Tbsp. extra virgin olive oil
  • 1/2 lb. asparagus, trimmed and broken or cut in thirds
  • 1 small red onion, sliced and halved
  • Advertisement

  • 1 medium bell pepper (color of choice), sliced and halved
  • 1 Tbsp. red wine vinegar
  • 1/4 cup mozzarella cheese, shredded

Directions:

Heat olive oil in a large skillet over medium heat; add the asparagus and red onion and saute until the onion begins to soften, about 5 minutes. Stir in the bell pepper and continue cooking, stirring occasionally, for 5 minutes. Remove from heat, add the vinegar and cheese; toss until mixed and serve.
