Shortcut Lasagna

This is a great recipe the whole family will love!

Ingredients:

  • 1 Tbsp. vegetable oil
  • 1 1/2 lb. ground chuck
  • 1 (large) can whole tomatoes
  • 1 (8 oz.) can tomato sauce
  • 2 pkg. spaghetti sauce mix (dry)
  • 2 (12 oz.) cans V-8 juice
  • 1 (large) pkg. lasagna noodles
  • 12 oz. cottage cheese
  • 1 (8 oz.) pkg. Mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Directions:

In large skillet, heat oil and add meat, breaking it up with a wooden spoon. Stir in next 4 ingredients. Bring to a boil; lower heat and simmer 10 minutes.

Cover bottom of oiled 9x13 inch pan with meat sauce, then a layer each of uncooked noodles, cottage cheese, and mozzarella. Repeat until all ingredients are used, ending with meat sauce.

Cover tightly with foil. Set on a cookie sheet. Bake at 350 degrees F for 1 hour.

Remove, let stand 15 minutes.

Sprinkle with Parmesan. Cut into squares. Serve.
