A friend gave me this recipe a long time ago. These cookies are quick to make when you want something sweet in a hurry. They are also good summer cookies, as they are kept chilled.
2 cups white sugar
1 stick butter (unsalted)
1/2 cup peanut butter (your choice)
2 Tbsp. cocoa
1/2 cup milk
3 cups old fashioned oats
1 tsp. vanilla
Prepare a large tray with slightly greased waxed paper, as these cookies will need to be kept in your refrigerator.
Stir and melt butter and sugar in saucepan until sugar is completely dissolved, then add peanut butter, cocoa, milk, vanilla, and oats. Stir together. Use a very small scoop, or a teaspoon, and drop cookies onto the waxed paper, then chill until firm. Store cookies in refrigerator.
