House Seasoning:

  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder

  • 1/3 cup water
  • 1 cup hot red pepper sauce
  • 2 cups self-rising flour
  • 1 tsp. pepper
  • House Seasoning
  • 2 1/2 lb. chicken, cut into pieces
  • Oil, for frying, preferably peanut oil
To make the House Seasoning, mix ingredients together and store in an airtight container for up to 6 months.

In a medium size bowl, beat the eggs with the water. Add enough hot sauce so the egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture.

Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.

Fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.

Southern Fried Chicken

COLD OIL CHICKEN (honest to God, that's the name of it...)

  • 2/3 cup flour
  • 1 tsp. each: garlic salt and seasoned salt
  • 1/2 tsp. paprika
  • 1/4 tsp. each: pepper, rubbed sage, thyme leaves, dried basil
  • ~3 cups veggie oil
In a bag, combine all seasonings. In a deep electric frying pan, pour in 1/2 inchof oil. Shake pieces of chicken in flour mix and place skin side down in the cold oil. (stay with me here...)

Cover the pan and turn to 350 degrees F. When you hear the chicken frying and sizzling loudly, set a timer and cook for 15 minutes.

Remove cover and turn pieces over. Cook, uncovered for 10 minutes longer or "till meat next to bone is done" (nowadays, cook to 160 degrees F)

This is one of the best hot or cold chicken methods I've ever tasted. (09/30/2005)

  • 2 cups of flour
  • salt and pepper
  • cooking oil
Preheat cooking oil in fry pan at medium to low heat...you don't want to set it too high or your chicken will cook too fast and will not be done on the inside.

Cut up chicken, salt and pepper it. (Zatarains Cajun seasoning is an excellent seasoning for your fried chicken.) Dip into the flour and place it into the preheated cooking oil. Cook until it is golden brown.

This is true southern fried chicken. You don't need all of those extra ingredients to make it good.
