- 1/2-3/4 lb. fresh spinach, washed and broken into bite-size pieces
- 8 slices bacon, cut up
- 1 large onion, diced
- 4 hard-boiled eggs, diced
- Italian dressing
- salt and pepper, to taste
- garlic powder, to taste, opt.
Saute bacon and onions until bacon is crisp. Drain on paper towel. Toss spinach with Italian dressing, salt and pepper to taste. (Add garlic powder to taste, opt.) Add bacon, onion and eggs; serve immediately.
