Strawberry Spinach Salad

Ingredients:

• 10 firm whole strawberries
• 1 large bunch spinach

• 1/2 cup sugar
• 1 tsp. salt
• 1 tsp. dry mustard
• 1/3 cup white vinegar
• 1 cup safflower oil
• 1 Tbsp. poppy seeds

Directions:

Wash, drain, and tear spinach into bite size pieces. Place in large salad bowl; chill. Slice strawberries in half. Set aside. Mix dressing ingredients together (except poppy seeds) in blender. Stir in poppy seeds. Just before serving, mix dressing with spinach and strawberries. 4-5 servings.
