Sweet Oil and Vinegar Salad Dressing

This is a great, quick dressing!

Ingredients:

  • 2 parts canola or vegetable oil
  • 1 part apple cider vinegar
  • salt and pepper, to taste
  • sugar, to taste

Directions:

Mix well or shake until sugar and salt are dissolved. Can be refrigerated. You can use olive oil, but it will solidify in the refrigerator.

That is also the basis for Pennsylvania Dutch sweet and sour for tomatoes. Grandma would soak the tomatoes in the apple cider vinegar and when serving, pass the sugar. We could add as much as we wanted. Very simple and a great side for meats.

I learned in France that you dissolve the salt, and sugar in this case, in the vinegar before you add the oil. It really does make a difference.
