Sweet Potato Casserole
- 4 or 5 medium/large sweet potatoes, peeled, cooked and drained
- 2 eggs beaten
- 1 tsp vanilla
- 2/3 cup milk
- 1/2 cup soft butter or margarine
- 1 cup sugar
- 1 cup brown sugar
- 1/3 cup flour
- 1/3 cup chopped pecans (or whatever nut you have, walnuts, hickory nuts, etc.)
Mix all ingredients above with a hand masher, not electric mixer. Pour into a 9 x 13 inch baking pan. Then put on topping.
For the topping: mix all topping ingredients. Crumble on top of sweet potato mixture. Bake 350 degrees F for 45 minutes.
Note: If you don't like nuts or are allergic, I have substituted old fashioned oats before. It is still good. I used 3/4 - 1 cup oats.
