If your shredded coconut dries out too much for certain recipes you normally would use it for, simply toast it on a baking sheet in a moderately heated oven, turning occasionally so it will brown evenly. The coconut will develop a lovely toasted flavor for other recipes and/or toppings. Toasted coconut tastes especially yummy sprinkled on a salad coated with Sesame dressing.

Spread shredded coconut evenly on a microwave-safe plate. Microwave on high for 30 seconds, then using a fork move the flakes around. Continue microwaving in 30 second intervals until some of the coconut begins to turn golden brown. Make sure to stir the flakes after each interval to prevent burning.

You can toast coconut in your oven, but it takes a lot of watching and you have to wait a long time to get it just right. Use your microwave instead! Start on high and toast a few minutes until it starts to turn brown. Stir, then toast in 30 second increments until it is as brown as you want. If you take the coconut from your fridge, it will take about 7 to 7-1/2 minutes.
