Tomato Soup Meatloaf

Tomato Soup MeatloafEasy meatloaf and so yummy!

Ingredients:

  • 2 lbs. ground chuck
  • 2 eggs
  • 1 large chopped onion
  • 1/3 cup instant oatmeal
  • 1 tsp. Worcestershire sauce
  • Advertisement

  • 1/2 tsp. seasoned salt
  • 1/3 tsp. pepper
  • 1 (10 oz.) can tomato soup
  • 4 large red-skined potatoes, quartered
  • 4 carrots, cut into 1 1/2 inch pieces

Directions:

Mix meat, eggs, oats, 1/2 of the chopped onions, Worcestershire and 1/2 can of the soup. Mix together with the seasoned salt and pepper and then form into a loaf.

Place potatoes, that have been scrubbed, but not peeled, the carrots and the onions around the meatloaf. Sprinkle with salt and pepper.

Bake at 325 degrees F for 1 hour and 20 minutes. Let rest around 10 minutes before slicing. Very moist and the veggies are so good with the meatloaf. My husband's favorite meal.

Hi - this sounds good but did you forget about the 1/2 can of tomato soup and left over onions? I assume you mix and pour over the top before placing in oven?

I forgot to say put the remaining 1/2 of the tomato soup & onions over the vegetables. Sorry!
