Turkey and White Bean Soup

This is really good, and great for freezing for another meal.

Ingredients:

  • 5 turkey sausages, remove casings
  • small onion diced
  • 1 jalapeno pepper seeded and diced
  • 1 clove garlic minced
  • 2 tsp. chili powder
  • 2 Tbsp. of tomato paste
  • 900 ml carton chicken broth, I use low sodium
  • 540 ml white kidney beans drained and rinsed
  • 2 cups of chopped kale
  • 1/4 cup of lime juice

Directions:

Heat a large pot over medium heat. Add sausages. Use a fork to break up the meat and cook stirring often about 4 to 5 minutes.

Stir in onion, pepper, garlic, chili powder, and tomato paste. Cook until onion is soft about 3 minutes.

Add broth and 2 cups of water. Bring to a boil and reduce heat to medium. Add beans and kale. Stirring occasionally, until kale is cooked, about 5 minutes.

Remove from heat, stir in lime juice just before serving.

Oh, one question! What is the weight of each turkey sausage that you use?

Oh my goodness, Coville, this sounds delicious! Going to save this recipe for when the weather cools down and try it using napa cabbage instead of kale simply because I love napa cabbage in soup :-)
