Sometimes eggs are used as a binding agent in some recipes. Sometimes they just make the recipe taste better (like tuna salad). I am sure there are other reasons.

If there is a reason that you can't or don't want eggs in recipes, see if you can search for 'eggless' recipes that are similar to the ones that are your favorites.
