Vegetable Medley

Ingredients

  • 1/4 cup butter
  • 4 green onions
  • 1 lb. zucchini, cut in rounds
  • 1 small green pepper, cut in strips
  • 2 Tbsp. brown sugar
  • Ad
  • 2 large tomatoes, cut in wedges
  • 1/2 lb. fresh mushrooms
  • 1 can fried onion rings - large size
  • 1 tsp. salt
  • 1/2 tsp. sweet basil
  • 1/4 tsp. pepper

Directions

Melt butter, Add onions, zucchini, mushrooms and green pepper; saute' for about 5 minutes. Add tomatoes. Sprinkle with salt, pepper, sugar and basil; mix well. Top with onion rings. Bake in preheated 350 degree F oven for 15 minutes. Serve as a vegetable dish or add diced cooked chicken and serve as a casserole, if you like.
