Vegetarian Slow Cooker Recipes?

Take 2 cans each of carrots, green beans, yellow beans or other vegetables. Two cans of stewed tomatoes. our the liquid off the carrots and beans. You might want to add another can of tomatoes and then a can of tomato juice to sub for beef broth. Or you can use 3 cans onion soup broth. If you use the beef broth for yourself, you will need 3 cans of lowfat/sodium broth.

To this I add sauted onions and 3 peppers, 1 red, 1 green and one yellow. I also add frozen spinach. Add pepper, there is enough salt in the canned items to season without adding more.

For a meal, make sandwiches to go with soup, if you want add cooked noodles 1/2 hour before you serve. You can add a 1/4 cup of this soup with a piece of meat for those who eat meat whether its fish, chicken or other. Be skimpy on juice and wrap the meat and soup in tin foil and grill till meat is done. Or instead put it (soup/meat) in a casserole dish and bake it. Meat don't dry out.
