Warm Broccoli Citrus Salad

This salad is a great combination of fresh veggies and fresh fruit.

Ingredients:

  • 2 cups broccoli florets
  • 1 1/2 cups thinly sliced carrots
  • Advertisement

  • salt, to taste
  • 3 cups grapefruit sections
  • 1/2 cup grapefruit juice
  • 1 1/2 cup drained chick peas
  • 1/3 cup raisins
  • 1 cup broken walnuts

Directions:

  1. Cook broccoli and carrots in 1 inch boiling salted water in saucepan for 3 minutes; drain.
  2. Return vegetables to saucepan; add grapefruit, juice, chick peas, and raisins. Heat for 1 minute.
  3. Spoon into serving bowl.
  4. Add walnuts; mix gently.
  5. Serve warm with favorite yogurt dressing.
