White Chocolate Cake

A slice of white chocolate cake.This is a great holiday dessert item. It's very pretty and looks good for any special occasion.

Ingredients:

  • 1/2 lb. white chocolate
  • 1 cup butter
  • Advertisement

  • 2 cups sugar
  • 4 eggs, separated
  • 2 1/2 cups cake flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup buttermilk
  • 1 cup chopped pecans
  • 1 cup coconut
  • 1 tsp. vanilla
Icing:
  • 1/4 cup margarine
  • 3 oz. cream cheese
  • 1/2 cup pecans
  • 1 3/4 cups powdered sugar
  • 1 tsp. vanilla
  • 2 Tbsp. reserved melted chocolate

Directions:

Cake: Melt chocolate over hot water, and take out 2 Tbsp. for the icing. Cream butter and sugar. Add egg yolks and chocolate; mix. Sift cake flour, baking powder, and salt together. Add to batter. Add buttermilk, pecans, vanilla, and coconut. Beat egg whites until stiff and fold into batter. Bake in greased 9x13 inch pan at 350 degrees F for 1 hour.

Icing: Beat icing ingredients over hot water. Spread or drizzle icing over warm cake.

Can you take a white cake mix and add white chocolate chips (melted) to the batter and make it taste good? Or is that just a waste of time and effort?

First off- it sounds awesome! Second- DO NOT MELT the chocolate first. Simply add the white ch chips to the batter. Trust me! They will melt on their own but still maintain without making your cake mushy. Add about 1/2 cup of them . Maybe a bit more if you wish.

You can also put the chips in the freezer for about 1/2 hour before adding to batter. It will also help them maintain . Either way/ itll work out great. Never be afraid to experiment when baking. Its what makes a great baker.
