Yummy Sweet Potato Casserole

Ingredients:

• 3 cups sweet potatoes (mashed)
• 1 cup sugar or sweetener
• 1 egg
• 1/2 tsp. salt
• 1/4 cup margarine
• 1 cup milk
• 1/2 tsp. vanilla

Topping:

• 1 cup brown sugar (packed)
• 1/4 cup margarine
• 1/2 tsp. vanilla
• 1 cup pecans (chopped)
• 1/2 cup all purpose flour

Directions:

Mix 1st 7 ingredients. Pour into a Pyrex baking dish. Mix last 5 ingredients in a separate mixing bowl & spread over potato mixture. Bake at 350 degrees F for 30 minutes.

Hi, I thought I would write to say I have this recipe, only mine calls for walnuts. I think pecans would be a great change. whenever I take this casserole somewhere, I am always asked for the recipe! People I know that do not even like sweet potatoes will eat this, and say this is the ONLY way I like them.(07/16/2006)
