Chris' Apple Bread
My husband makes this bread for my 5 year-old often. It's a family favorite and never lasts long. As you can see, someone stole a slice before we could even get a picture :).
Ingredients:
- 2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 cup butter softened
- 1 cup sugar (we like to substitute 1/2 cup brown sugar and 1/2 cup sugar)
- 2 eggs
- 2 cups finely chopped apple (we use the peeler/corer/slicer to make quick work of this)
Directions:
Preheat oven to 350 degrees F. Grease one 9x5 inch loaf pan.
Mix flour, baking powder, baking soda, salt, cloves, and cinnamon.
In a large bowl, beat margarine, sugar, and 1 egg until smooth.

Add second egg and stir in vanilla.
Stir in apple.
Add flour mixture and mix until moist.
Spread in loaf pan.
Bake 50-60 minutes. Let stand 10 minutes and remove from pan. Cool on rack. Makes 1 loaf.
