Easy Homemade Guacamole
The easiest way to make guacamole is to mash ripe avocados, pitted and peeled, of course, with a potato masher to the consistency that you like.

Avocado Platter
Mix base with mixer and spread on plate or platter. Top base with veggies in order listed. Serve on tortilla chips.

My Famous San Diego Tacos
Cook your ground beef, add onion, salt, pepper, garlic and anything else you like. Set it aside in a bowl near the pan. Clean the pan or use a clean frying pan. Put about a Tbsp. of oil in the pan and let it get hot enough to sizzle if you flick a drop of water at it (stand back, lol).

Cinco de Mayo Party
We are having a Cinco de Mayo party at school on Tuesday and were having a taco bar, lemon-lime drinks, and crafts for the kids. The kids will love to make their own tacos.

Fat Free Corn Tortilla Chips or Strips
Tortilla chips are typically fried and laden with fat. Corn tortillas, on the other hand, have NO fat. Make your own chips by cutting the tortillas with kitchen shears into wedges or strips, scatter them on a shallow pan and bake at about 300 degrees F until crisp.

Use Apples to Ripen Avocados
Guacamole and chips is a traditional Mexican snack. If your avocados need to ripen quickly, put them in a paper bag with an apple.
